Brut DOC Sicilia

Born from the splendid hills of the Chirchiaro district at 550 m above sea level, our Brut represents the freshness and energy of a Sicily you don’t expect, a celebration of aromas and conviviality.
Winemaking

The vineyards are located in the Chirchiaro district, among the hills of the hinterland of western Sicily at an altitude of 500 meters above sea level on a medium-textured calcareous-silicon soil. The vineyards are planted with an espalier system with exposure to the east, guyot pruning.

 

Harvested by hand in the first week of August, the grapes are softly pressed and then fermented at a controlled temperature of 15°C in steel tanks. The second fermentation with the Martinotti or Charmat method continued slowly for 5 months.

Food Pairing

Very fresh, ideal as an aperitif or as a pairing.
